IJEOMA and my name means "Safe Journey"
So here are a few fun facts about me:
I am a Special Education Teacher by day, passionate about West African Vegan Food and love being a wife and mom. Two years ago I made a commitment to live a meatless life and I have never looked back ever since.
I'm a Nigerian - American and I attended an all-girls boarding school growing in up in Nigeria.
I immigrated to the U.S. as a student to attend Ramapo College of NJ, became an Executive board member of the Student Government Association and a proud member of Lambda Theta Alpha, the first Latin Sorority, Inc.
I married into a different tribe, hence the Igbo first name and Yoruba last name.
Finally, I'm a proud military spouse, proud mother of 3 Anna's and I enjoy traveling.
So my life has definitely been a journey (like my name) and I'm grateful it's been a safe one.
I stepped out of my kitchen to explore other Vegan / Vegetarian culinary pleasures outside the four walls of my cooking universe and I bought a camera.
My goal is to bring pure joy through food, cooking Nigerian inspired vegan meals and making wonderful connections: West African Food meets Vegan Western Cooking.
