Curried Chickpeas & Jollofed Couscous

Never has a meal been so heartwarming - savory and oh! so satisfying. In as little as 15 mins to prep and 25 mins to cook, this meal feeds 4 - 6 people. I've become a super fan of chickpeas. You can call chickpeas or "Garbanzo Beans" the popular go-to for most plant-based eaters. This is because Garbanzo beans have nutritional value and health benefits. It is also a great protein source and substitute for chicken or turkey recipes.


400 g cherry tomatoes

1/2 medium-sized onions

1 red bell pepper

1 stalk of green onions

Fresh coriander or herbs (optional)

1 tsp dried chili

1 tsp pepper flakes

1 tbsp curry powder

1 tsp thyme

3 garlic cloves

1 tsp minced ginger 1 tsp ground coriander

1 tsp ground cumin

2 tsp tomato purée

1 cup unsweetened almond milk

1 1/2 cup water

2 tbsp vegetable seasoning

2 tbsp extra virgin olive oil

2 X 400g cans chickpeas, drained chickpeas

1 ripe plantain


2 cups dried couscous

1 1/4 cup Mama Sinmi's Red Sauce (or tomato sauce)

1 1/4 cup water

1/2 tsp Himalayan salt

1 bay leaf

1 tsp olive oil

Couscous Cooking Directions

In a small pot, bring your Mama Sinmi's Red Sauce and water to a boil. Remove from the stove or hot burner. pour in your couscous. Cover and let it sit for 5 minutes. Fluff with a fork and its ready.

Sauce Directions

In a medium-large sized saucepan heat 2 tbsp oil. Add your onion, tomatoes, and bell peppers. Cook for about 6-7 minutes until soft. In a small food processor, add your garlic cloves, ginger, coriander, cumin, and tomato purée. Blend until it becomes a smooth paste. Add a teaspoon of water for a smoother consistency. Add the blended paste to your saucepan. Cook for about 2-3 minutes until the paste doesn't taste so harsh and acidic. Add all your seasonings, including the water and almond milk. Gently add your chickpeas. Cover and cook for 5-7 minutes until the curried sauce is thicker. Serve with your Jollofed Couscous, garnish with green onions and a side of your favorite veggies. Enjoy.
