Obstkuchen | German Fruit Cake

I'll be picking up more than a few cooking and baking tips on my adventures abroad. Today I attempted to make a delicious non-dairy German Fruit cake, and I believe it turned out pretty swell.


3 tbsp Flaxseed

1/2 cup all-purpose flour

1/2 tsp baking powder

1/2 cup of strawberries, raspberries, and blueberries

3/4 cup vegan white chocolate

1/2 cup almond milk

1 tbsp water

1/2 cup granulated sugar

1 tsp vanilla paste

1 packet Dr. Oetker Glaze

1/2 coconut oil

Making the most of our time inside during the quarantine. Quarantine Baking in the German countryside making Fruit Cake which they call Obstkuchen.”


Whisk your flour, flaxseed, water, coconut oil, baking powder, almond milk, and sugar together until everything is smoothly blended.

Pour your ingredients into a 9 inch round baking pan, greased or lined with parchment paper.

In a small clear bowl melt the white chocolate over boiling water on medium heat.

Let your cake completely cool down. Drizzle your white chocolate on the cake.

Place your cut berries on the cake

In another small pot, follow the instructions on the glaze packet. Pour your prepared glaze unto the fruit and cake.

Serve and enjoy.
