Tuscan Chopped Salad


The creation of this fresh tray of seasonal vegetables will leave your mouth watering with goodness - the goodness of one meal packed with high-dense vitamins, minerals, fiber, and disease-fighting phytochemicals, and more. All nutrients which are good for you. It's yet another easy recipe that can be prepared for family dinners. Some of the benefits of eating a mostly plant-based diet are that you get a lot of high-value nutrients for cheap and very little work preparing it in the kitchen. You and your family can create a culture of eating fresh in 2021 and living a healthy lifestyle.






Substituting simple carbs for complex carbs, not only allows your body to do more work but will lead to burning more fat, keeping your metabolism going, and living healthy. So below is my recipe and food for thought on achieving your best week.



Ingredients

3 tablespoons Greek or Extra Virgin olive oil

1 small French bread, Baguette or Sour Dough bread, cut into 1-inch cubes (1 cup) OR 1 cup store-bought Croutons

1 teaspoon toasted pine nuts (optional)

4 Radishes, thinly sliced

1 teaspoon seasoned salt

1 cup Cherry Tomatoes, cut into halves

1/2 cucumber, unpeeled, cut into cubes

1 yellow bell pepper, cut into cubes

1 broccoli head, cut in bite sizes

1/2 Red Onion, chopped

1 bundle of Asparagus

1/2 cup Cauliflower florets

1 Avocado, cubed

1/2 cup Shredded Carrots

1 tablespoon chopped Parsley




For the vinaigrette:

1/4 teaspoon Dijon mustard

3 tablespoons Strawberry vinaigrette or dressing (Optional)

1/2 cup good olive oil

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper




Directions

Place tomatoes in a large mixing bowl. Toss and mix in your broccoli. Mix together. In a separate pot, flash steam your asparagus so it's tender but a little crunchy (optional). Combine the remaining ingredients in a large bowl. In another bowl whisk together your Olive Oil, Dijon Mustard, Strawberry dressing, salt, black pepper, bread crumbs pine nuts, and parsley. Gently pour in your homemade vinaigrette dressing into your fresh vegetable mix. Fold the dressing and vegetables into each other. Plate your dish. Add your avocado and garnish with a little parsley. Serve and enjoy.
